Carouby de Maussanne is a traditional French variety. They originated in Mausanne, near Avignon in southern France. Many believe this variety to be the original Mange Tout! It has been cultivated since the 19th century.

It is a stunning plant with pink and mauve flowers that are so beautiful that it can even be grown as an ornamental.

The flat pods are incredibly sweet and they should be harvested when the peas are barely visbile in order to capture the best flavour.

Sow the peas in shallow trenches approximately 5cm deep and 5cm apart in the spring through to early summer. The plants will need some support as they grow. Harvest the pods from May onwards and pick regularly for a continuous harvest.

Mange Tout is French for “eat all” because you can eat both the pod and the pea! They are sometimes called sugar peas, snap peas or snow peas.

Mange Tout are a great source of Vitamin C and are also great for building collagen which is important for healthy skin and hair.
